This recipe is great as you can customize it to suit your family’s preferences.
If you prefer to not add nuts to this bread you could substitute white or chocolate chips or add a few more strawberries. If you use nuts, walnut or pecans are perfect for this bread,
The icing is also optional. When I plan on serving this at brunch, I will omit the icing as I try and not serve sugary items for breakfast or brunch.
I like to use a pinch of meringue powder in my icing. It gives it a thicker texture and slightly hardens it. This helps it stay on the bread and not puddle around the bottom. If you decide to not use meringue powder it is a good idea to place the loaf on a rack while drizzling it with icing.

I have been making this bread for 20 years. It is a wonderful addition to brunch or even on a dessert spread with muffins and cakes.
Strawberry Nut Bread
- ½ cups fresh strawberries, hulled, cleaned, mashed (do not drain the juice)
- 1 tsp lemon juice
- 2 eggs beaten
- ½ cup vegetable oil
- 1½ cups flour
- ½ tsp soda
- ½ tsp salt
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ cup sugar
- ½ cup nuts
- Combine berries and their juice with eggs, lemon juice, and oil in bowl.
- Combine dry ingredients, except nuts, and gradually stir in berry mixture.
- Add nuts. pour batter into a greased, floured loaf pan.
- Bake in 350 degree oven for one hour
