Ranger Cookies are sure to become a family favourite and a staple in the cookie jar.
A Taste from Years Ago
Though the name may not be familiar the taste and texture of these cookies will definitely bring back memories of cookies from your childhood.
My grandfather would always have a batch of cookies in the cupboard. He would add dried fruit which added another incredible layer of bite to the cookies. They were spectacular!

Rich butter combined with the crispy cereal and the chewiness from the oats give these cookies a fabulous texture. They really are the perfect bite!
Ranger Cookies
- 1 cup of butter
- 2 eggs
- 1 cup of white sugar
- 1 cup of brown sugar
- 1 tsp of vanilla
- 1 tsp of baking soda
- ½ tsp of baking powder
- ½ tsp of salt
- 2 cups of flour
- 2 cups of quick oats
- 2 cups of Rice Krispies
- 1 cup of shredded coconut
- Cream butter and sugars.
- Add eggs and vanilla.
- Mix until smooth.
- Add flour, sifted with baking soda, baking powder and salt.
- Add Rice Krispies, coconut and oats.
- Drop by teaspoonfuls onto cookie sheets.
- Press down with fork.
- Bake at 375*F for 7 minutes or until golden brown.
- Chilling the dough makes it easier to handle.

There are many ways to change up Ranger Cookies. Different additions will really change the flavour and the texture of the cookies. There is no limit to the combinations!
Some great options:
- walnuts or pecans
- dried fruit (we particularly love dried cranberries)
- chocolate chips
- corn flakes in place of the crispy rice cereal
- toasted coconut
- M&M’s to add a touch of fun
- any of your favorite cookie stir ins
