These 2 bite Cinnamon Sugar Muffins are quick and easy to make and are sure to become a family favorite.
With just a few ingredients you can have a batch of these 2 bite treats, reminiscent of the cinnamon sugar cake donuts from your favorite bakery.
Mini Cupcake Tins
Miniature cupcake tins are a must for this recipe. They are the perfect size for these 2 bite treats. You should not use miniature cupcake liners for this recipe as we will be rolling the warm muffins in a cinnamon sugar mixture.
They pop out of the tins with ease and clean-up is quick and easy.
Cinnamon Sugar Muffins
- 1¾ c. flour
- 1½ tsp. baking powder
- ½ tsp. salt
- ½ tsp. nutmeg
- 1¼ tsp. cinnamon
- ⅓ c. oil
- 1½ c. white sugar
- 1 egg
- ¾ c. milk
- ½ c. butter, melted
- In a bowl, combine flour, baking powder, salt, nutmeg and ¼ teaspoon cinnamon.
- In another bowl, combine thoroughly oil, ¾ cup sugar, egg and milk.
- Add liquid ingredients to dry ingredients and stir only to combine.
- Bake at 350 degrees for 20 to 25 minutes.
- Shake muffins out immediately.
- While hot, dip the muffins in melted butter, then roll them in the sugar and cinnamon.
Store the finished muffins in a covered container.
This recipe makes 24 muffins.
