Sugared Grapefruit Rind

  • 3 Ruby Red grapefruit
  • 1½ cup sugar + ¾ cup for sugaring
  • water
  1. Wash the grapefruit very well, I even used a tiny touch of dish soap and made sure I rinsed the fruit a number of times.
  2. Cut the grapefruit into quarters and remove the fruit.
  3. I did try and remove a touch of the white pith with the edge of an over turned spoon.
  4. Slide the rind into thin strips.
  5. Fill a medium sized pot with the rinds and cover with water.
  6. Bring to a boil and let simmer 10 minutes.
  7. Strain and repeat this step 3 more times.
  8. This is important to remove the bitterness from the rind.
  9. Strain well.
  10. You will notice the color has deepened and the rind has a touch of translucency now.
  11. In the same pot add 1½ cups of sugar and 1½ cups of water.
  12. Stir in the sugar and bring this to a boil.
  13. Reduce to medium low and add the strained grapefruit rind.
  14. Simmer now until all the liquid is gone.
  15. Remove the strips to a rack to dry for 7 hours or over night.
  16. Once dry toss in sugar until coated.
  17. Place on a parchment lined cookie sheet to dry completely, about an hour.
  18. Store in a covered jar.
