Organic Blueberry Perogies - Varenyky

  • Blueberry Filling:
  • 2 cups of blueberries - froze or fresh - washed and stemmed
  • ½ cup of sugar
  • 1 tablespoon of cornstarch
  • ¼ water ONLY if using fresh blueberries
  • Dough:
  • 2 cups of sour cream
  • 4 cups of flour
  1. For the filling:
  2. Combine all the ingredients in a small saucepan
  3. Only use water if you are using fresh blueberries
  4. Cook over low heat until the blueberries come to a boil.
  5. Reduce heat and simmer 2 minutes then remove from heat.
  6. Allow to cool before using.
  7. For the Dough:
  8. Combine until a dough is formed.
  9. Cover and let rest for 30 minutes.
  10. Separate the dough into two balls.
  11. Roll out one piece at a time on a lightly floured surface until it is very thin.
  12. Using a cookie cutter or glass, cut out 2 inch circles in the dough.
  13. Brush a little water around the edges of the circles, and spoon some filling into the center.
  14. Fold the circles over into half-circles, and pinch edges to seal.
