Strawberry Chipotle Jam

- 1 quart of strawberries
- 3 cups of sugar
- 1 lemon - zested and juiced
- 2-3 chipotle peppers - minced
- ¼ teaspoon salt
- 1 box Certo pectin
- Chop half of the berries in half.
- Mash the remaining berries in a large pot.
- Add the remaining strawberries, lemon juice and zest, peppers, salt and pectin.
- Stir well to combine.
- Slowly bring the pot to a boil.
- Add the sugar and stir well to combine.
- Bring the pot to a full rolling boil.
- Boil hard for 1 minute.
