Serves: 5 pounds
Ingredients
  • 5 pounds of mussels
  • 3 cloves of garlic- chopped
  • 1 teaspoon of parsely- chopped (optional)
  • 2 tablespoons of butter
  • 1 cup of white wine
  • 1 cup of water
  • canola oil
Instructions
  1. Place butter in a large pot and heat over medium heat.
  2. Once melted add the garlic, parsley, wine and water and bring to a boil.
  3. Add the mussel to the pot, cover and steam for 5 - 8 minutes.
  4. Discard any shells that do not open.
  5. Remove the mussels from the shells and place them on the perforated tray.
  6. Place the tray of mussels on the top rack of the smoker and smoke for 2 hours.
  7. After 2 hours remove the tray from the smoker.
  8. Layer the smoked mussels in sterilized canning jars and cover with oil.
  9. Cover and store in the fridge.
