Serves: 5 pounds
- 5 pounds of mussels
- 3 cloves of garlic- chopped
- 1 teaspoon of parsely- chopped (optional)
- 2 tablespoons of butter
- 1 cup of white wine
- 1 cup of water
- canola oil
- Place butter in a large pot and heat over medium heat.
- Once melted add the garlic, parsley, wine and water and bring to a boil.
- Add the mussel to the pot, cover and steam for 5 - 8 minutes.
- Discard any shells that do not open.
- Remove the mussels from the shells and place them on the perforated tray.
- Place the tray of mussels on the top rack of the smoker and smoke for 2 hours.
- After 2 hours remove the tray from the smoker.
- Layer the smoked mussels in sterilized canning jars and cover with oil.
- Cover and store in the fridge.
