Keto Chocolate Chunk Pecan Cookies

- 1 cup of almond flour
- ½ cup of sugar free chocolate or a very dark chocolate - chopped into rough chunks
- ½ cup of toasted pecans - chopped
- 3 tablespoons of butter - melted
- 1 tablespoon of sweetener of your choice - I use Xylitol, Erythritol or Monk Fruit
- 1 egg
- ½ teaspoon of vanilla
- ½ teaspoon of maple flavoring
- Preheat your over to 350°F
- In a small bowl combine the butter, sweetener, egg and flavourings, whisk until combined.
- In a larger bowl combine the almond flour, chocolate and pecans.
- Add the liquids and stir until completely combined.
- Using a tablespoon scoop out your cookies onto a parchment lined baking sheet.
- Bake for 15 - 20 minutes.
- Remove from oven and allow the cookies to cook completely on the cookie sheet.
