Crispy Maple Lentil Crème Brulee

Ingredients
  • 2¼ cups (560 ml) 35% cream
  • 1 tablespoon of pure maple syrup
  • 1 teaspoon of vanilla
  • 5 egg yolks
  • ¼ cup of sugar
  • ¼ cup of sugar for the finishing of the crème brulee
  • ½ cup of crispy maple lentils - recipe is below
Instructions
  1. Preheat the oven to 325 ºF. In a saucepan, heat the cream for 5 minutes with the maple syrup and vanilla.
  2. In a bowl, whisk together the egg yolks and sugar.
  3. Stir in the hot cream.
  4. Pour the mixture into four ¾ cup crème brulee dishes.
  5. Bake in a water bath.
  6. To do this, place the dishes in a baking dish.
  7. Pour hot water ¾ up the sides of the dishes.
  8. Bake for 40 minutes.
  9. Let cool and refrigerate to chill completely.
