Keto Coconut Flour Waffles

- 4 ounces cream cheese, softened
- 4 eggs
- 2 teaspoons vanilla or almond extract or a combination of both
- 1 tablespoon Lakanto (monk fruit), xylitol or erythritol
- 4 tablespoons coconut flour
- 1½ teaspoons baking powder
- 1-2 tablespoons of butter - melted
- Place cream cheese, eggs, almond or vanilla extract and Lakanto into a blender.
- Blend well.
- Add baking powder, coconut flour and melted butter and blend again until well combined.
- Pour approximately ¾ of a cup of batter into a preheated waffle maker.
- Close the lid and cook for 5 -6 minutes or until there is just a touch of steam coming out of the waffle maker.
- Remove gently with a spatula.
- Top with butter, berries, whipped cream and Keto maple syrup.
