Ingredients
  • 4 ounces cream cheese, softened
  • 4 eggs
  • 2 teaspoons vanilla or almond extract or a combination of both
  • 1 tablespoon Lakanto (monk fruit), xylitol or erythritol
  • 4 tablespoons coconut flour
  • 1½ teaspoons baking powder
  • 1-2 tablespoons of butter - melted
Instructions
  1. Place cream cheese, eggs, almond or vanilla extract and Lakanto into a blender.
  2. Blend well.
  3. Add baking powder, coconut flour and melted butter and blend again until well combined.
  4. Pour approximately ¾ of a cup of batter into a preheated waffle maker.
  5. Close the lid and cook for 5 -6 minutes or until there is just a touch of steam coming out of the waffle maker.
  6. Remove gently with a spatula.
  7. Top with butter, berries, whipped cream and Keto maple syrup.
