Crispy Roasted Lentils

Ingredients
  • Roasted Garlic
  • 2 -3 heads of garlic
  • 5 tablespoons of oil
  • salt
  • pepper
  • 2 cups of green lentils
  • water
Instructions
  1. Using a sharp knife trim the pointed end of a bulb of garlic, just to expose the cloves inside.
  2. Repeat with all of the heads.
  3. Place them on a large sheet of foil and generously drizzle with oil.
  4. Season the heads well with salt and pepper.
  5. Wrap the foil tightly and place in on a pan in the oven.
  6. Roast for35 - 40minutes.
  7. While the garlic is roasting cook the lentils in water until tender but with a slight bite.
  8. Strain using a fine mesh colander and rinse with cold water.
  9. Place the lentils into a large bowl.
  10. Once the garlic is done roasting pour the oil from the wrapped package over the lentils.
  11. Squeeze one of the heads of garlic into the blow.
  12. Stir gently to combine.
  13. With the remaining heads squeeze out the roasted cloves onto a foil lined cookie sheeet.
  14. Generously rub down the surface of the sheet with the roasted garlic.
  15. Pour the lentils onto the cookie sheet and season with salt and pepper.
  16. Roast in the oven until crispy.
  17. Cool completely.
  18. Store in a gas jar with a tight-fitting lid.
