Crispy Roasted Lentils

- Roasted Garlic
- 2 -3 heads of garlic
- 5 tablespoons of oil
- salt
- pepper
- 2 cups of green lentils
- water
- Using a sharp knife trim the pointed end of a bulb of garlic, just to expose the cloves inside.
- Repeat with all of the heads.
- Place them on a large sheet of foil and generously drizzle with oil.
- Season the heads well with salt and pepper.
- Wrap the foil tightly and place in on a pan in the oven.
- Roast for35 - 40minutes.
- While the garlic is roasting cook the lentils in water until tender but with a slight bite.
- Strain using a fine mesh colander and rinse with cold water.
- Place the lentils into a large bowl.
- Once the garlic is done roasting pour the oil from the wrapped package over the lentils.
- Squeeze one of the heads of garlic into the blow.
- Stir gently to combine.
- With the remaining heads squeeze out the roasted cloves onto a foil lined cookie sheeet.
- Generously rub down the surface of the sheet with the roasted garlic.
- Pour the lentils onto the cookie sheet and season with salt and pepper.
- Roast in the oven until crispy.
- Cool completely.
- Store in a gas jar with a tight-fitting lid.
