  • Dough:
  • 4 - 4½ cups of flour
  • 1 package of yeast - I use quick rise
  • 1 cup of milk
  • ⅓ cup of sugar
  • ⅓ cup of butter
  • 1 teaspoon of salt
  • 2 eggs
  • filling for cinnamon rolls:
  • 3 tablespoons of butter - melted
  • 1 cup of brown sugar
  • 3 teaspoons of cinnamon
  • 1 cup of whipping cream
  1. Dough:
  2. In a mixer bowl combine 2 cups of flour and the yeast.
  3. Over medium low heat, heat the milk, sugar, butter and salt to 115 degrees.
  4. Add the liquid to the flour mixture.
  5. Add the eggs.
  6. Using the dough hook beat at low speed for 30 seconds.
  7. Turn the mixer to high and beat for 3 minutes.
  8. Turn the mixer to medium and add 2 cups of flour.
  9. Knead the dough for 4 minutes.
  10. If it is sticky you can add a few tablespoons of flour.
  11. Knead for 2 more minutes.
  12. You should have a moderately stiff dough that is smooth and elastic.
  13. Form into a ball and place in an oil rubbed bowl.
  14. Be sure to roll the ball to ensure the entire surface is covered in oil.
  15. Cover with plastic wrap and a tea towel.
  16. Place it somewhere warm to rise for an hour.
  17. After an hour punch down and divide in half.
  18. Allow to rest for 10 minutes.
  19. On a lightly floured surface roll half the dough to a 12 x 8 inch rectangle.
  20. Brush the surface with melted butter.
  21. Combine the cinnamon and sugar.
  22. Sprinkle the surface with the sugar cinnamon mixture.
  23. Starting with the longest side roll the dough, pinch the seam to seal.
  24. Set aside with the first roll.
  25. Lightly cover with plastic wrap and allow to rest for 10 minutes.
  26. Preheat oven to 375 degrees.
  27. Spray pans well with non stick spray.
  28. Using a serrated knife slice the dough into 2 inch rolls.
  29. Place in prepared pans leaving space between each roll.
  30. Pour 1 cup of whipping cream over the rolls, split between the number of pans used.
  31. Bake for 20 - 25 minutes.
  32. Remove from oven and invert on a plate.
  33. Allow to sit for 5 minutes before removing pan.
