Serves: 36 cookies
  • 1¼ cups of butter - softened
  • 4 cups of flour
  • 1 cup of packed brown sugar
  • ½ white sugar
  • 2 eggs
  • 1 teaspoon of baking powder
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ¼ teaspoon of vanilla
  • red and green gel food colouring
  1. In a mixing bowl cream together the butter and sugars until light and fluffy.
  2. Beat in the eggs and vanilla.
  3. In another bowl combine the flour, baking soda, baking powder and salt.
  4. Gradually beat the flour into the creamed butter and sugar mixture.
  5. Split the dough into 2 even portions.
  6. Place one portion back into the mixing bowl and add colour.
  7. Mix until well combined.
  8. Wash the bowl and beater before mixing the second colour.
  9. Split each dough portion into 2 balls.
  10. You will need 4 pieces parchment paper.
  11. Draw 9x6 inch rectangles on parchment to use as templates.
  12. Roll each ball on the parchment, using a flat edge to pull the edges in as you roll out the rectangle.
  13. Layer one rectangle of dough on to the opposite colour.
  14. Using the parchment paper roll each layer into a log.
  15. Chill for 60 minutes.
  16. Slice into cookies and bake at 375 degrees for 9 - 11 minutes.
