Death Star

May the 4th be with you!

I admit it, I am a complete Star Wars nerd!

I fell in love with it back when I was a kid and enjoy it just as much today.

It is one movie collection I can watch over and over and never tire of.

Naturally I had to introduce it to my son and he is now a hard core fan.

As does his Star Wars Lego collection and my empty wallet attest to.

He will spend countless hours building huge Star Wars landscapes and scenes for the amazingly intricate ships he builds. His building skills are very impressive and I really should capture more of what he creates on film.

Now I do not  build Lego ships, the thought gives me a headache.  But I wanted to flex my creative muscles and see what I could come up with using a Star Wars theme for his birthday a few years back.

Wanting to do a decent job I decided that perhaps the Death Star was the way to go.

Easily done with a ball pan, the design fairly simple, I whipped up some batter and some fondant and gave it my best!

Now it could have been much more detailed, and if I were to do another, there would be some changes. Though for a bunch of 9 year olds I got 2 thumbs up!

Marshmallow Fondant

1 bag of mini marshmallows
2 tsp of flavoring of your choice
2 tbsp of water
2 pounds of icing sugar (approx. 7 cups)
gel food coloring
shortening
1 cup of icing sugar mixed with 1 cup of cornstarch

Grease a large bowl or measuring cup. Place marshmallows, flavoring and water in greased bowl. Microwave on high for 1 minute. Stir, if not completely melted microwave for 30 second intervals, stirring in between until melted.

Place the icing sugar into a large mixing bowl. Pour melted marshmallows over sugar and using an electric mixer with the dough hook, mix on low speed until half of the icing sugar is incorporated. Turn up speed a bit and incorporate as much of the remaing sugar as possible. The mixture will be stiff. Turn out onto a surface dusted with the icing sugar/cornstarch mixture. Knead fondant until it has a smooth texture. If it is sticky knead in more icing sugar. Once the fondant is smooth, lightly coat with shortening and wrap tightly in plastic wrap and let rest for one hour.

After one hour you can color your fondant. Using a clean toothpick, add the gel coloring to the fondant. To keep you hands clean wear gloves or grease your hands with shortening. Knead the color into the fondant. It is easier to split the fondant into 3 or 4 pieces to do this part and then knead them together once you have acheived the color you want. If at anytime the fondant becomes sticky, dust with the cornstach/icing sugar mixture. If your fondant is very stiff you can microwave it for 10 second shots to soften it for easier kneading. Keep fondant wrapped in plastic. Roll out to desired size for your cake.

A bit of work and so worth it, it tastes wonderful, unlike store bought fondant.

Butter Cake

 Dean and Heather got married!

The weekend was fantastic!

The weather could not have been more perfect, the menu was outstanding, and love was in the air.

I was so excited when I was asked to do the cake, and of course  immediately began planning.

Because the only thing better then doing a cake, is doing a cake for friends!

Trusting friends, who gave me complete design control.

The only request was that it be vanilla.

I went with a traditional butter cake with a vanilla buttercream filling. Covered with a vanilla almond flavored marshmallow fondant.

Gerbera daisies, traditional daisies, carnations and statice top it of beautifully.

Perfect for an outdoor afternoon wedding.

Butter Cake

1 1/2 cups of butter, room temperature

2 1/2 cups of granulated sugar

5 eggs

1 teaspoon of pure vanilla extract

3 cups of all purpose flour

3/4 teaspoon of baking powder

1/4 teaspoon of salt

1 cup of milk

Preheat oven to 350F. Grease and flour pans. In a mixer bowl cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in vanilla.

Mix flour with baking soda and salt. Add the flour mixture alternately with milk, starting with the flour.

Pour into prepared pans. Bake until toothpick comes out clean. Cool 10 minutes in pan. Loosen sides and remove. Cool completely before decorating.
